    Need some gold potato recipe ideas

    So the ubiquitous Instacart error occurred. My mother-in-law did an Instacart order in which she wanted three gold potatoes. She ended up with three 5 lb sacks of gold potatoes.

    I now have two of those sacks.

    I generally don't do that many potato-centric recipes as potatoes are just a bit too starchy for me, but I need to make do with what I have. Obviously, mashed potatoes and potato hash are on the list.

    I've been googling and searching. I found a chicken curry and potato one I will try. I'd like to work in a casserole of some type.

    So, if 10 lbs of gold potatoes suddenly appeared in your lap, what would you do (other than panic over this curious supernatural occurrence)?

      Panhead John I made this today. It came out really good. I added a couple handfuls of shredded cheddar (three kinds) into the soup. Yummy.

    also, gnocchi could be a fun dish to make. Or since playoff football is going make some potato skins or even homemade potato chips.

      The soups are a good idea because they freeze well!

      Scalloped potatoes, potato galette, potato pancakes. Hash browns. Home fries.

      You can dice up a small potato and sautée it with some onion and pepper, then make an omelet. Or you can make a Spanish omelet by pouring the eggs over the potatoes and baking it in the oven, like a quiche.

      It’s easy to think of potatoes as something that needs to be made into something else, but you can just cube them, boil them, and serve them with salt, pepper, and butter; or cube them, roast them, and serve them with salt, pepper, and olive oil.

      (I tend to not have any potatoes in the house at all, and then I’ll buy a 5 lb bag and we’ll have them frequently. Then I’ll go a month before buying them again.)

      Baked stuffed potato or twice baked. You can cook ahead by freezing some too, easy reheat. We do that often especially for camping.

        +2 on the soups. Also, potatoes Diane, au gratin potatoes, scalloped potatoes, potato salad, shepherds pie, tater tots….

          And my dad will tell you all you need for those 10lbs is to cook them….add salt, pepper and butter and you are set!

            Here goes. Cut your potatoes into 1/4’ slices and do the same with onions. You need at least half as much onions as potatoes. Put a layer of potatoes in a baking dish, and then as layer of onions put some pats of butter on the onions. Add salt and black pepper. Don’t go lite on the pepper. Repeat the process until the dish is filled. Cover and bake at 350 until potatoes are tender, about 30-45 minutes depending on thickness.

            I got this recipe from my Cajun neighbor years ago. Man could she cook!

              Here's a slightly more elaborate version, the main virtue being the addition of bacon:

              gcdmd It looks good and bacon will make a anything taste great. The recipe I suggested relies heavily on onion (a lot more than your recipe), butter and black pepper to make it taste great. I think like a lot of BBQ two items are cooked differently, but both are good in their own way. I think I would like to try yours.

            Fondant potatoes! Very underrated way to cook potatoes and honestly might be in the top 2-3 best non-french fry potato preparation and fairly easy to make too.

            Generally speaking you cut them into cylinders maybe the size of a nice scallop, brown in a cast iron skillet on both sides and then finish in the oven with stock and butter.

            I also would throw in a shepherd's or cottage pie to use up a bunch of them without it just being a potato side dish

              I prefer gold to russet for baking. I think the golds have more flavor.

                Potato soup! That I think may be the key! Something that freezes well will be pivotal to using up this many potatoes.
