Potatoes are amazing things. There seems to be no end to their culinary usefulness. I mean, start to finish, potatoes can be included. Breakfast, lunch, dinner, snacks, desserts. All covered.
Many, many years ago a line cook that worked for me wanted to do a potato mille feuille. O_o
“Um…ok..?” Anyway, she produced a mille feuille using starchy potatoes, fingerlings, purple potatoes, russets, etc… 5 or 6 layers. It looked amazing. And the taste matched. It became part of our regular offerings.
That’s back when I was the head chef for a large catering company… Did that cost more? Heck yeah it did! But some of our clients would have to look up the word budget. ;-)
