I went to one of our many Cajun specialty stores we have and bought a Pork tenderloin stuffed with boudin and wrapped in bacon. I cooked that on the Kamado Joe with some deer sausage. Fired up my Weber kettle and cooked a pot of purple hull peas , with some diced green chiles and tomatoes, and some deer sausage. The pork I smoked with apple and cherry, the beans were smoked with hickory.
