This is the marrow of this site! An absolute gem that’ll change your approach. I had so much lamb etc leftover and was wondering how to repurpose it. I give you "vaguely middle-eastern lamb flautas". One of the best leftover meals I’ve made in a long time.
Based on HH’s vids I warmed up the tortillas, put down a line of Harissa, lamb I cut into smallish pieces, leftover chopped onion, tomato and cucumber, cheese then wrapped. I fried them in lard and served w leftover yogurt and cucumber salad and a sort of Israeli couscous primavera that was also left over. The flautas weren’t spicy enough so I slathered more harissa on top.

I made Birria for the first time a couple months ago. Of course I loved the tacos, but I think the broth was the best part. We made 3X the recipe so we hsve 1.5 left. I think this is a great idea for the meat. Maybe just drink the broth.
