I made meat heads pimento cheese reciepe last weekend, i used his version listed on the bottom. I'm using a Big Green Egg. I smoked the peppers for a while at low heat then cooked them on direct heat at the end.
I used the pimento cheese for smoked first then grilled pimento cheese sandwhich as well as stuffing for ABTs. My man meathead THANKS!!!!!
I've since used it on cheeseburger and its great as well. I make a huge batch every time I make it and freeze the leftover. Its great for when people come over for drinks but not a full meal. Just pull it out of freezer the night before and then chop some bread up, little bit of olive oil and put it in brolier for a bit, makes a impressive looking appetiver.
