Air Fryer Onion Rings
1 Cup buttermilk
1 large egg
3/4 cup Panko
3/4 cup Traditional Bread Crumbs (the kind you buy at the market)
1 cup all purpose flour
1 teaspoon salt
1/2 teaspoon cayenne
2 large, sweet onions, sliced 1/4" thick and separated into rings
oil, for spraying
In a shallow dish, whisk together buttermilk and egg. In another shallow dish, combine panko, bread crumbs, flour, salt and cayenne. Dip the onion rings into the buttermilk mixture, shaking off any excess, then dredge in the breadcrumb mixture. Place the rings on a baking sheet lined with parchment, cover with plastic wrap, and refrigerate for 30 minutes.
Working in batches, spray the onion rings with oil and place in the air fryer basket in a single layer - don't overcrowd. Set temp to 400 degrees and air fry for 2 minutes. Without turning the rings over, spray with oil again and air fry for another 3 minutes. Now, turn the rings over, spray with oil once more and air fry for 3 more minutes. Remove to a serving bowl and keep warm - repeat with remaining onion rings and serve with the Chipotle Sauce.
Chipotle Cream Dipping Sauce
4 ounces sour cream
4 ounces mayo
1 chipotle pepper (canned in adobo sauce), minced
1 teaspoon adobo sauce from the can
1 Tablespoon heavy whipping cream
2 teaspoons fresh lime juice
1/2 teaspoon chili powder
Combine everything together, cover and refrigerate until ready to serve. (You'd be happier if you did this the night before)
