    Side dish suggestions

    I have some guests coming over next weekend and am going to be making 4 slabs of ribs all done with a different rub to see what everyone likes best. I wanted to do a bake bean and a mac and cheese side and was looking for suggestions on your favorite recipes. I am also open to other sides if you have something you love. Thanks for the ideas.

    Not sure what kind of sauces and rubs you are using but I always like having some sort of vinegar based side or something available to compliment or offset. Vinegar based slaw, cucumbers and onions (especially when in season, etc... I also am a big fan of pickles being available when bbq is around. Cornbread is also a guilty pleasure for me when eating Q... especially in the fall.

      I cooked Crack and Cheese last weekend... twice. It's delicious.

        Don't know if you can fit this in with your cook, but this is a KA meal / side on its own. I use a Medium - Large Alum Roasting / Pasta pan and just cover the top with alum foil and throw it on the grill. Since your rig is taken up with ribs @ 225, I'd just throw this in the oven at about 450.

        As far as baked beans, I plan on doing MH's
        Kentucky / Boubon Baked Beans http://amazingribs.com/recipes/beans...ked_beans.html with some Pork Shoulder Steaks soon.

        --Ed Kruchinsky's Hot Potatoes

        Serves: 4-6
        Difficulty: Medium - some experience needed

        Preparation time: 20
        Cooking time: 30-40 mins

        Ingredients


        1 large yellow onion, peeled and cut in chunks
        5 medium/large potatoes, peeled and cubed, non-baking type preferred
        1 can (10 oz.) diced tomatoes and green chilies, with juice
        1 ½ cups (4 oz.) fresh white mushrooms, sliced*
        1 teaspoon celery salt
        1 teaspoon Morton® Coarse Kosher Salt
        1 teaspoon freshly ground black pepper
        1 teaspoon garlic powder
        ¼ cup butter or margarine
        1 strip wide (18 inches) heavy-duty aluminum foil, about 2 feet long
        Aluminum pie plate

        Method

        Place onion, potatoes, tomatoes and chilies, mushrooms, and seasonings in a large bowl.

        Pour melted butter over the top and gently blend together with a spoon. Spoon mixture onto aluminum foil.

        Fold each side of the foil over 3 times to create a tightly sealed pouch. Set pouch on an aluminum pie plate. Place on grill rack over a medium hot fire. Cover and grill for 30 - 40 minutes or until potatoes are tender.

        *Canned mushrooms, with liquid, may be substituted
