    Appetizers

Anybody got any good ideas for munchies while we're waitin' for the smoker to do its magic?

Little smoked sausages, wrapped in bacon, stab it with a toothpick, cover in brown sugar. Throw them in the oven at 350F until the bacon gets to however you like it. Flip and put on broil if you want to. Everything is good with bacon.

I do the same thing, but with shrimp instead. Add some pineapple and throw on the grill until the bacon is how you like it.

Jalapeños sliced in half lengthwise, seeded. Stuff with habanero jack cheese. Wrap in bacon. I cut the bacon in half lengthwise and used 1 strip per jalapenos half. Roast until bacon is cooked to your liking and the cheese is melted. I used the indirect side to get things going than right over the coals to crisp it up.

There seems to be a bacon theme here.

Yeah as you said everything is good with bacon. Could probably put bacon on a toad and it would be good.

My dog should read this. He loves hunting toads but when he picks them up they excrete something that burns his mouth and makes him foam like he's rabid. He's obviously not smart enough to learn his lesson because he keeps doing it. Maybe I should head out before him and bacon wrap all of them.

Just about any version of Jalapeno poppers usually disappears rapidly...
White queso dip, an' restaurant style tortillas...
          Taco Crunch*
*Will provide recipe, if any are interested. Been servin', and eatin this since the mid '70's... a bud's recipe.
Couldn't be much easier, or much quicker.
Veggie trays, especially with your own special dip prominently available as an option, next to a standby or two, ie.: Ranch, or Spinach...
More to come, as I ponder the question...
(I'd have to posit the theory that about anything cheese rivals/equals anything bacon, in popularity.
So use both! You should be Golden!!!!

I found a recipe called Fritos Fantasticos in "Smoke It like A Pro" by Eric C. Mitchell. It is a spiced ground beef mixture with onions and cheese mixed in, and stuffed into Fritos Scoops. I have had a few get togethers, and everybody raves about them. I always have to give out the recipe.

                Bacon-wrapped bacon? Too much? Nah!

I keep forgetting to try making sausage balls on the grill. I think the smoke might add a little to the flavor.

AZRedneck - great! I suggest baking a few in the oven for comparison.

RonB Meh. I've had thousands of those oven baked treats in my lifetime. But the thought of them has me wanting to make my own sausage now.

AZRedneck - do it - it's not hard. There are plenty of online recipes or prepackaged mixes for whatever kind of sausage you want.

"Lollipops" as my Mother calls them.
                  1. Take boiled ham sliced about 1/16" or so (mainly because it has a handy rectangle shape)
                  2. smear softened cream cheese on a slice
                  3. add a whole dill pickle along the short side of the ham, and roll it up.
                  4. Slice in to thick slices (5/8" or so) and stick a tooth pick in the edge to make it into a lollipop.
Always a big hit with my friends and family. I will admit to making a few extra to just eat whole instead of slicing. Good stuff!

                    BLT stuffed cherry tomatoes

Carve the center out of cherry tomatoes (this is the hardest step -- a grapefruit spoon is a good tool!)

                    Mix up:
crisp bacon on the smoker and crumble up
                    chopped green onion
                    Mayo

Stuff empty cherry tomatoes with the rest. Refrigerate until ready to serve. These actually keep really well.

Sounds delicious. Do you do anything with what you scoop out? I love BLTs, and I'll eat tomatoes and mayo with or without bread, but it's better on bread.
