I just read about this on another site. There was no description at all. So I googled it. As the name implies, it's supposed to keep breaded and fried foods crisper longer. I am curious if it changes the flavor.
Well, at least it's 1 sole ingredient, wheat dextrin. So, you can likely find it cheap from unbranded sources.
As to it working... I'm sure fast-food places use it, but when I fry stuff at home, it's consumed as it's cooked so no use for it here really. Now if it helped with keeping reheated fried foods crispy when microwaved AND it wasn't poison that'd be a winner.
