    Update on my rice post

This post discussed how to cook rice. I tried the method using brown rice recently and it turned out great - the best brown rice I have ever cooked. It was properly cooked, fluffy, and no extra moisture in the pot.

    1 C brown rice
    1.25 C water
Salt to taste (1/2 tsp for me)

Wash rice thoroughly and drain well.
Place water, rice, and salt in a pot with a tight fitting lid, (I used a 3 qt pot), and bring to a boil on high.
Reduce heat to low, cover and cook for 30 min. Rest for 10 min with lid on.
Do not take lid off while cooking or resting. The steam helps the rice cook properly.
    Fluff with fork and serve.

Actual cooking time depends on your pot and lid. You may have to adjust the time a bit to get the best results, but once you do, use the same pot and lid every time you cook rice.

15 minutes for brown rice? I usually do 45 minutes for brown, 15-20 for white.

Yes. Both brown and white rice will absorb the same amount of water while cooking. But it takes longer for water to penetrate the outer hull of the brown rice. That means more evaporation which means you need additional water to evaporate.

I cook rice like pasta - several cups of water for one cup of rice and then drain when it is done. I usually add some salt and bay leaves to the water too.

That does a good job too, but you lose some of the nutrients when ya dump the excess water.

        Another update.

I cooked 1 C of white rice last night using 1.25 C of water and .75 tsp salt. Same method as above but only 15 min plus the 10 min rest, and it turned out great.
