    I’m very fond of shrimp in a pepper with just a bit of pepper jack cheese then bacon wrapped and put on the grill. There won’t be any left over!

        Of course my OCD kicked in so keeping it simple wasn't an option. This is what I did.

        Hot: Jalapeños, browned hot chorizo, creme cheese, Carolina Reaper-Jalapeno jack cheese, Meat church Hot Honey Hog rub, wrapped in bacon, glazed with Kinders Hot.

        Medium: Small Mexican yellow chilies (not sure exactly what they are, perhaps Guero - Carribe), raw shrimp peeled and deveined, Monetary Jack cheese, wrapped in bacon, Killer Hog The BBQ Rub, glazed with Killer Hog The BBQ rub.

        Mild: Sweet red mini peppers, cream cheese, diced fresh pinapple, browned diced honey ham, wrapped in Ham, glazed with Sweet Hawaiian BBQ sauce.


        Smoked in my KBQ in cherry splits with both poppets open for extra smoke. Cherry gave nice color and mild sweet some. Big Hit.
