    Seeing many mention corn of some type. A Corn elote salad would be excellent as well!!!!

            This is my favorite corn recipe. You can triple it. This is from my buddies farm. His mom would make this for us all the time during picking season. I ate this stuff by the pound back in the day. (Add 50% more butter than what the recipe calls for, obviously )

            You pretty much named them, but at a couple of BBQ joints I have enjoyed a creamed jalapenos corn dish and most recently a creams poblano cilantro cream spaghetti. Both were quite enjoyable. Alston I had hatch chili mac and cheese.

            We always start with the classics…potato salad, Cole slaw, and baked beans. After that it’s Mac n cheese and either cornbread or a corn casserole my wife makes that has diced green chilies - super popular. Also not common, but works great…a simple green salad with choice of dressing.

                Lots o’ great stuff here. SWMBO makes a dish she calls Monterrey Rice Bake—rice, cream cheese/milk/green chilies/colby jack cheese. One of our favorite bbq sides.

                    Corn on the cob and potatoes are usually the sides that find their way on to my smoker. I'm trying to become more adventurous this year.

                      Southern Fried Corn. Take it off the heat when the corn is just lightly caramelized. Frozen corn works fine, but fresh off-the-cob corn is best.

                        Do you cook the corn before taking it off the cob? It kinda looks that way.

                        The corn is raw, carolts . You cut it off the cob and scrape the "milk" out of what's left on the cob. Then you fry it with butter and/or bacon grease, much like you make pan-fried potatoes.

                        In 5-10 minutes any liquid will be gone and the kernels will begin to turn a very light brown--that's when it's caramelized and ready to serve. Just season with S&P to taste and you're good to go.

                        I make it with all butter because I end up with brown butter and lightly browned fried corn. Delicious!
