Grill corn on the cob without husks or silk, brown but don't burn.
Mix Hellman's mayo (or some other good mayo) with one or two canned chipotle peppers, smash the peppers with a fork or some other blunt instrument.
paint the corn with the chipotle mayo, then roll the corn in finely grated cotija cheese. Fabulous.
Sounds interesting Doc. I shall attempt to remember this when my/the good corn comes in this year. Stuff available in the store right now is suck-ay-vou. Hmm, ever try this with canned? Not sure if my veggie grilling pan holes are small enough.
