I Sous Vide my ham yesterday @ 140 for 4 hours then I put it on a cookie sheet lined with foil and glazed it with the following glaze I cooked up. I stuck the ham in my oven under the broiler three separate times applying the glaze before each time.
2/3 cup unsweetened pineapple juice
2/3 cup light brown sugar
1/3 cup Southern Comfort
1 Tbsp. Grey Poupon mustard
Dash of ground cloves
Dash of ground ginger
Pinch of ground cinnamon.
I reduced these ingredients by half on the stovetop then I added
1+ Tbsp. honey
2 Tbsp. butter
The Southern Comfort worked really well in the glaze.
