      You know I tried using just mayo one time after all the rave reviews and while it cooked just fine, I found the flavor just wasn't there. Bland almost. 🤷🏻‍♂️ Maybe I'll try again by mixing the two into a spread and see what happens.

        I use mayo on the outside and mayo on the inside. Then I use grated cheese that I mix in with a bit of dijon mustard or hot mustard for the inside. Add ins include bacon and or pickles.

        Had grilled cheese sammiches as a kid growin up one to many time. It was a regular Friday fare cuz of no meat day. Learned to to dislike it in a big way. When I learnt I wasn't goin to die fer eatin meat on a Friday and it was a big hoax anyways I never looked back. There is nuthin appealin in it over me. It would take a mountain of evidence that would entice me to it again.

          Fish sticks every Friday in elementary school. There was always some gray bits in there. Otherwise, our elementary school had the best food, just not on Fridays.

        I use a heavy mist of a high quality olive oil on the bread. And not EVOO. Works great for us.

          That looks like fun. I buy almost exclusively Tillamook cheese and butter, but $15 bucks for an 8 oz jar plus $10 bucks shipping takes the fun right out of it. I will try the recipe using Duke's mayo and Tillamook butter and cheese. My go to GC sandwich is a slice of Tillamook sharp cheddar, a slice of Kraft Deluxe American, and a sprinkle of shredded parm. Put a handful of plain Ruffles Ridges on the side and I got a plate full of 'Merican fude!!

            Hahahaha. Me too, but when it comes to grilled cheese I’m good for 5-8 slices of cheese depending on what else I add to the mix.

          Like Andrrr - I tried mayo on the outside once and will never do again. It did work as the bread was perfectly golden brown and crispy but the taste was all wrong.

          On a similar but different note, according to my 13 yr old daughter starbucks makes a great grilled cheese and she had me replicate it last time I made sourdough bread.

          You mix softened butter with parmesan cheese and use on the outside of sourdough bread and the cheese mix is white cheddar and mozzarella cheese. I cannot attest to the Starbucks version but it made one hell of a grilled cheese at home. The butter/parm mix gave it a frico like crust. Highly recommend that approach

              No worries there. I'm still going to give it a go. Imagine how many grilled cheese sandwiches I can get out of just one jar.

              Yeah, for $25 bucks I'll go ahead and mix 2 tbs of buttah with 2 tbs of Duke's. Times are tough and gettin tougher here in the 1st world.

              I should clarify that when I said I tried it in my post above, it was NziT the premixed stuff. Wayyyyy to expensive. I mixed it up myself. It was great!

                I mixed up a batch and made a GC sandwich today. I added a dash of GP and one of smoked cayenne. It was pretty good. I liked the umami of the butter with the tangy finish of the Duke's. I'm doing a philly cheesesteak this evening and will grill my hoagie with this compound.
