    Eggs Benedict substitute sauce?

    So, one of my favorite indulges is eggs benedict, but I hesitate to chomp down on a half stick of butter. I'm wondering what ideas you budding chefs out there might have with using a bbq sauce instead? Hollandaise sauce has butter, egg yokes, lemon and cream. My best substitute so far is a Carolina Gold (Trader Joes) that is a mustard and vinegar based sauce. Any other ideas out there?

    I like the mustard based BBQ sauces.... but can honestly say I have NEVER EVER had Eggs Benedict. I've had hollandaise sauce though, and don't think the taste profile will be the same. But go for it and let us know! Bet it tastes good!

      The combination of the mustard, vinegar, and sugar somewhat hits that lemon note in Hollandaise sauce but is no ways as mellow. Much stronger but still very good when you break open the egg yoke (eggs over easy of course).

        Interested in this one because of all the dairy in those sauces I never have eaten benedict or Hollandaise. I'm not sure about a vinegar mustard base flavor profile for this dish but what do I know. Hopefully some more ideas posted.

          Google "light hollandaise sauce" or "imitation hollandaise sauce" There are a lot of recipes out there that don't use as much butter...

            You could just add some lemon to mayo to thin it down a bit? Maybe a bit of water too. But then you still just have fat, eggs, and lemon in a slightly different format.

              Hhhmmmm, interesting. I would go with what Skinsfan1311 suggested. Then riff on it to your tastes.

                Yup! I suggested it because that's exactly what I do...not because I'm looking to avoid all the butter....I just don't want to go through the effort

                Country/sausage gravy is a great way to serve EB's. And use bacon instead of ham.
