Nothing fancy here. I take a quart bottle of cider vinegar and add a tbs of rub, pepper flakes and maybe some brown sugar. Shake it up and go. Also makes a simple but good finishing sauce for pulled pork.

Look into James A Roller, Destination-BBQ.com He is all about SC bbq, and has a book out, Going Whole Hog. Book is interesting, has many vinegar or mustard based sauces.
Eastern Carolina:
½ cup white vinegar
• ½ cup cider vinegar
• ½ tablespoon sugar
• ½ tablespoon crushed red pepper flakes
• ½ tablespoon Tabasco sauce or Texas Pete made in Winston Salem NC. Always Texas Pete for us
• Salt and freshly cracked black pepper to taste
Close to Blues Hog Tennessee Red:
1-1/2 c Apple cider vinegar
1/3 c Brown sugar
1/3 ketchup
1/2 tsp hot sauce
1/2 tsp Kosher salt
1/2 tsp Onion powder
1/2 tsp Coarsely ground black pepper
1/2 tsp Worcestershire sauce
1/2 tsp Red pepper flakes
Combine all the ingredients in a sauce pan and simmer for about 1/2 hour until it thickens.
Lexington NC Red
1 cup distilled vinegar
1/4 cup ketchup
1/4 cup apple juice
1 teaspoon hot sauce
3 tablespoons light brown sugar
1/2 tablespoon Morton’s coarse kosher salt
1 teaspoon crushed red pepper
1 teaspoon finely ground black pepper
I only smoke butts with the Carolina sauce similar/same to the ones above. They come out great, family and friends always ask for them. I just think those sauces compliment the pork so well. I do enough other things with bbq sauce.

Coming from the Southeast, this is why I love pork BBQ so much. Sliced, chopped or pulled then so many different styles of sauces, textures and flavors. It's all good. I also love beef, lamb, chicken etc.
2 cups distilled white vinegar
1 tablespoon coarse salt
I teaspoon black pepper, or more to taste
1 teaspoon hot red pepper flakes, or more to taste
1 small onion, thinly sliced
1 jalapeño pepper, thinly sliced
Throw everything into a jar and shake.
I cut the amount onion and jalapeño in half and thinly dice them. I usually add a bit of heavy beer to it too.
This is my pork mop sauce recipe. Been using it for years.
Mop Sauce: 2 Cups Apple cider vinegar 1 Cup Water 3 Tbsp Gr. Black pepper 2 Tbsp Salt 1 Tbsp Worcestershire sauce 1 Tbsp Paprika 3 Tbsp Rub (that you are using) 1 Tbsp Cayenne pepper
