Worcestershire sauce is a pantry staple - so where did this sauce come from, how did it become a global condiment, and what are the best ways to use it?
I am allergic to fish (fish, not shellfish) so it shocked me to find out that fish sauce is an ingredient. I have a pretty strong reaction to eating fish, but I absolutely love Worcestershire sauce. I guess the rest of the ingredients mask the fish sauce enough for me to tolerate it.
I imagine the fermentation and aging process probably strips out whatever allergen there is in fish. I know someone else with a fish allergy (or so she says) that I've seen put Worcestershire sauce on things...

Yeah, I was doing some recipe development once and learned that W sauce is not vegetarian nor vegan. And that soy sauce is not gluten free. Sub tamari for soy sauce, no gluten.
If'n ya got the soy sauce naturally fermented from China, yes it has gluten from wheat, but not GMO like is grown here in the USA. Just like peeps can eat bread & noodles in Europe or the Middle East and not have the same reaction as the U.S. wheat.
I learned a lot about that this past year or two. Try cooking a hibachi stir fry when you have one kid coming with a wheat/gluten allergy, another with an egg (and oat!) allergy, and a 3rd with a soy intolerance going on...
I've got coconut aminos and tamari sauce in the pantry, alongside soy sauce. The only safe one I can use at the griddle is the coconut aminos, and I cooked up an asian style griddle sauce using that.

Rubs:
Usually make my own riff’s on Memphis Dust and BBBR. Also use Meathead’s commercial rubs and occasionally try something new. I like a couple from Tuffy Stone and Kinder’s. After several surgeries, I’m very sensitive to “spicy” stuff, so I need to be careful about heat levels.
Interesting article, thanks for sharing! I love the stuff personally and knew it was made from anchovies, but didn’t really know the rest of the story or the process.
I will let you report back on that experiment before I dose my wife's Coor's Light with a dash of Worcestershire sauce. Conveniently, all the sauces I cook with are in the door of the beer fridge in the garage...

As someone who was born and raised in Worcester Massachusetts until I was 20, it makes me cringe and shout at the TV when I hear the pronunciation butchered. I was trained to use "Wus-ta-sher" or "Woo-sta-cher" , and there sure as heck no 'H' in "Worcester" !
I was in Worcester Mass as a teenager for a week the summer of either 79 or 80, and could have sworn the locals were calling the city "Woo-sta". Or at least that is my memory of it as a kid from the south...
