    Peter Luger Knock-off Recipe?

    Does anyone have a good recipe for a knock-off version of Peter Luger's old fashioned sauce? Yesterday my home nurse was lamenting the fact that her local grocery store stopped carrying it, so I want to try to make her some. I found one at Epicurious but it gets mixed reviews, so I decided to go to a trusted source.

        There seem to be quite a few attempts at copycat recipes out there ... but I could only find one (there may be more that I missed) that incorporates one of Luger's "secret" ingredients ... anchovy paste ... as an option. Other recipes just use Worcestershire Sauce because "it contains some anchovies". None seem to incorporate another Luger "secret ingredient" ... tamarind.

        If it were me, I'd try using it as a starting point and maybe experiment with adding tamarind and maybe reducing (or even eliminating?) the Worcestershire Sauce.

          I just looked up the ingredients for Lea & Perrin's. The list includes tamarind and anchovies, so I think it's probable that knock-off recipes use whatsdishere sauce to avoid people having to go look for tamarind concentrate or turning their noses up at anchovies.

          PGH_RAM - I do believe you're correct. I've read comments about a couple of recipes that use Worcestershire sauce in lieu of anchovies/tamarind and they typically say that while the results aren'e as good as using the "real thing", it's still pretty good.

          Apparently Indonesian. In fact only hits were this cooking site, a mechanic site, and LinkedIn Indonesia. The sites in English has this strange syntax. Might be using Google Translate to translate.

        I have never had the original so I can’t compare. The only Luger copycat I made I was not impressed and never made again.

          I'll note one thing re the sauce that Luger now sells: the ingredients include sugar, corn syrup, and HFCS. 100-ish years ago, when they first made it, sugar was certainly available and the original MAY have included corn syrup as well, but HFCS wasn't a thing back then, so they have "cheapened" it some and who knows what other changes have been made and when. For better or worse...?

            So how does Luger compare to other sauces such as Heinz57 and A-1? Never been a big fan of A-1.

              I can get it locally. I’m certain that I’ve bought it twice, and both times I’ve eventually tossed partial bottles that were several years past their date.

              It’s good, I just don’t use steak sauce.
