Looking for amazing Tex-Mex recipes

Im a huge Tex-Mex and traditional Mexican and Southwest food fan. I love spicy smokey food. I'm always searching for breakfast and dinner burrito recipes, etc. I was
spoiled by all the New Mexico cuisine while living in Colorado back in the day. Miss them Hatch green chilies.

I'd be forever grateful if you'd share some great recipes with me. There has to be some great smoked southwest shredded beef recipes!! Cheers

Here's one for Mexican shredded beef, (Machaca), - you could do this on the grill to take it up a notch.

And here's one for fajitas with pickled red onions. This is now my go to recipe for fajitas although I normally use chicken.
