    Dinner time!

    Independence day, 4th of July. HWMO and I are having ChattaVegas Steak Sammiches and home made fries. (we did Q yesterday)

          We had leftovers. Here is a pic from tonight's dinner in our house, leftover ribeye steak.

            we had a pound of top sirloin and we stacked it, same grain line, wrapped tightly and frozen. Next day the meat was sliced thin on the deli slicer across the grain. prep the pepper, mushrooms onion if using, provolone, tomatoes and shred lettuce.

            Use a stainless skillet and keeing the skillet to temp around 250 on it's way to around 300. put down the meat. let stand for a minute or so./. meanwhile, make certain the deep fryer oil is at temp and you have once fried french fries.

            flip over the meat and pill pieces apart, then roughly shape into the shape if the roll. add veggies and dribble water around the meat. when the water has evaporated, dribble a little more and add the cheese on top, then lay the bun on top of the chedese/meat/veg mixture. leave there until the cheese melts. lift it all and transfer to paper covered plate. dress with mayo, tomato, lettuce if desires, season with a little salt.

            Serve with twice fried french fries.

              I need to get a deli slicer. We use leftover Tri-tip. London broil and similar cuts all the time for sammies and that would make life a lot easier.

                we bought ours 20 years in Atlanta at a garage sale and it was a STEAL!. Today, for $20, i could buy one 10 times better but HWMO won't let me. "Why?" HE ASKS, "we have one already"
