    Thinkin’ ‘bout a sandwich

Dog days startin’ here. Temps in the upper 80s/low 90s, humid, rain late in the afternoon. Not quite Florida, but working on it.

Mrs Mosca is taking me to Ruth’s Chris up at Mohegan Sun Pocono tomorrow night! Well, taking us, but you get it. She has enough comps to bring it down to about the same as going to Cracker Barrel, and she isn’t playing much these days and doesn’t want them to expire. Yay me!

Dog days for this old guy means not all that hungry, and not all that interested in cooking anyhow. And I don’t want to feel all bloated Saturday night. So breakfast has been avocados and tomatoes. Dinner has been just a sandwich.

Tired of lunch meat. I’ve eaten enough baloney to pass as a politician. Poking around in the freezer, I found these. (Photo geeks, notice where the camera went goofy trying to choose between natural light and stove hood light.)

Sliced ‘em open: that’s brisket. I got a couple kummelweck rolls:

And I have some pimento cheese spread,

    And these pickled red onions.

So I think you can see what is happening here.

Whaddya think? Lettuce and tomato, too? They’re just vegetables, you know.

That’s too much roll for me these days (thanks Wegovy) so I’d have the sandwich open faced using a piece of lettuce as the top.

No tomato for this kid. But, that’s kind of like beans in chili - if you like ‘em do it and if not don’t. Beyond that, it sounds like a great sandwich, enjoy.

That’s how I felt 4 years ago. The food noise comes back. It isn’t as insistent, but that “Nah, I’m not interested” feeling goes away.

Pimento cheese is one of my main food groups. Keep it in the fridge all the time. Do make roast beef, pimento cheese and onion sandwiches a lot. Lettuce and tomato is certainly not to hurt the sandwich.

I vote YES on the tomato and lettuce...and anything else interesting left in the frig. Maybe you better take a look Mosca.

I have a boatload of cherry and grape tomatoes. My only concern is mashing too many flavors together, and losing the theme.
