Visiting my daughter in Denmark. I always try a different smørrebrød (traditional open face sandwich) place and this one was the best one I’ve tried. Restaurant Palægade….for any Pitmasters who visit or live in the area. I don’t go out to eat that often so I always try to try something new or something I’d never make at home. I had 3 rounds and had the waiter pair each sandwich with a different aquavit. It was a spectacular meal.
Apparently the only rule is to start w herring…if you’re having herring. So my first smørrebrød was mustard herring (pickled) w confit egg yolk, pickled garlic and bacon. A fairly traditional flavor combination.

My second round was a fried sardine w onion soubise, pickled spruce shoots and a fermented asparagus sauce.

Third round, and maybe my favorite, was veal tongue with celery apple gerkins and stewed chanterelles.

Dessert was a lemon thing that was incredible.
