    Smørrebrød in Copenhagen

    Visiting my daughter in Denmark. I always try a different smørrebrød (traditional open face sandwich) place and this one was the best one I’ve tried. Restaurant Palægade….for any Pitmasters who visit or live in the area. I don’t go out to eat that often so I always try to try something new or something I’d never make at home. I had 3 rounds and had the waiter pair each sandwich with a different aquavit. It was a spectacular meal.

    Apparently the only rule is to start w herring…if you’re having herring. So my first smørrebrød was mustard herring (pickled) w confit egg yolk, pickled garlic and bacon. A fairly traditional flavor combination.

    My second round was a fried sardine w onion soubise, pickled spruce shoots and a fermented asparagus sauce.

    Third round, and maybe my favorite, was veal tongue with celery apple gerkins and stewed chanterelles.

    The food in Copenhagen is incredible! Go visit.

      Totally agree. Also, it’s very easy here bc we don’t really have Scandi restaurants near me.

      When I would be in Italy there was a small restaurant that I would frequent. I would tell the waiter I'll have whatever the chef would like to prepare. Not only great meals but the wait staff would hang out at the table, talk and bring out the Limoncello. Great meals, fun times.

    I suspect you'll be trying your hand at some of those flavor combos when you're back in your own kitchen. What a fantastic meal! It looked great to me and I'm not usually a fish or veal fan. It was the way those proteins were paired that made it so interesting to my taste buds.

    It's good that you took full advantage of the opportunity of visiting that wonderful restaurant. We loved our visit to Denmark a few years back, but the smørrebrød we tried were not nearly so clever. I would have remembered!

        I’m gonna start w pickling herring. I’ll be checking w my fishmonger on the availability of herring soon.

        Ah, nice!! Yes, Copenhagen is the place to go for the smørrebrød! I’ve been to several places, trying to find the best spot. This one I have missed, will check it out next time. The herring is always the first one, and the aquavit and a beer is awesome. It’s such a treat. Good on you to try several combinations, it looks great!
