Well here we go again. Today is stoopit sandwich day, chorizo version. Mrs Mosca loves this stuff but can’t eat it, and I’ve been forcing myself to find ways to use it up before it goes bad (Poor me.) After a week or so of breakfast tacos and omelets and scrambles, I’m down to the last 1/4lb. I have to say, of all the (pretty much the same) ways I’ve used the chorizo, this one is by far the best, completely over the top but actually in a restrained way.
I started by sautéing a couple habaneros, a piece of poblano, and a quarter of an onion. If you take the seeds and veins out of habaneros, they’re really not all that hot; maybe as hot as a hot jalapeño. You’ll see them a couple photos down.
Make a chorizo smashburger. Exactly like a regular smasher.

Flip, add the egg, add the cheese to the burger. This is all about timing.

Flip the egg, and add a slice of cheese to the egg. Turn off the heat if you’re using cast iron, everything will coast to this from here:

Smear the top with salsa/crema mixed together

And There you have it. Obligatory glamour shot, with a Sumo orange.

And it holds sandwich integrity remarkably well. I like my yolks for these things gummy, neither hard nor runny. This is all about the timing of the meat and egg, adjust it to your liking.

Of all the extremely similar things I did with the chorizo (I’m not especially imaginative, and especially not so early in the morning), this is the one that put the biggest smile on my face. I really enjoyed this. Recommended, would make again. Hell, I’d order this if I saw it on the menu in a restaurant.
