        Here is my attempt at Laura's style stuffed turkey wings using the cut up turkey chunks from my local grocery store. I'm sure these were meant to be used for soup or stock but they were big and meaty and it worked out in the end. Very good and also spicy. The rice and gravy was almost as good as Laura's.

        Discovering that these "wings" are actually chunks. I used Hatch chilies instead of bell peppers.

        Going with it anyway, stuffed, seasoned, in the veggie and broth mixture for braising.

        Looks and smells incredible but gotta make the gravy before a taste test

        Browning the flour. I did not need to add additional seasoning to the gravy. The braising liquid was full of flavor.

        Soul food would not be complete without Sausage Gravy on scrambled eggs
        I did not have low carb biscuit
        I did over salt, shame on me. To lesson saltiness, thinned it out by adding more cream.

            Thanks bbqLuv. I thought there might be a personal or hand me down recipe. I have a Collard greens recipe (just made CG’s this past Thursday). But I always like to see what others do and maybe adjust my recipe. I’ve done it a few times here.

          Much as I love sausage gravy I've never heard of it being served on scrambled eggs, always on biscuits. Either way its not stuffed turkey wings. That post belongs in SUWYC, not the Team Cook thread.

            My collards recipe. The base anyways, I adjust as the mood strikes. Sometimes I sub ham hock for the turkey wings (like I will do tomorrow). Sometimes I sub yellow onion for the leeks. And so on…..

              Oh, and I’ve never had Larry’s seasoning in my pantry until just this year, I subbed Tony Chacheres (hence the TC notation).

              Thank you SheilaAnn. On a recent trip I had a conversation with a woman about collard greens and she recommended using smoked turkey wings. Never heard of that before. Now here I see it for the second time. Surprised the recipe does not include apple cider vinegar.

            Ok! Better late than never! So for the holidays, I always buy a fresh turkey and break it down. I had three whole wings in the freezer.

            Served over steam rice. I chose to make collard greens from the bonus cook section.

            Here is the smoked cornbread. Not a lot of distinguishing smoke flavor, but the hot honey butter was 🔥🤤🤤🤤

            Cook Notes: as I was working through the recipe, the “stuffing” didn’t make sense. And then I realized the the “stuffing” was practically the same as the Acadiana creole spice mix. Which, btw, is really tasty! Also, I still had some of the “cooked flour” on hand, so after sautéing the trinity for a while, I added a couple tablespoons. Then proceeded with the recipe.

            Overall, I think this was a success.
