I'm planning on it. SheilaAnn I will add peas only if you say it's ok. No big deal if you want us to follow the recipe exactly.

Opting out of this one because in an odd bit of coincidence I made a chicken pot pie this past weekend and as much as I love a good pot pie, I'm not sure we need it twice in two weeks.

As for what I did, I winged the whole thing but looking the recipe my process was very similar if not practically identical to the one listed above (plus peas and cubed potatoes). I did also cook and top it with the pie crust directly in a cast iron skillet vs using a separate baking dish

Haven't gotten around to posting it in SUWYC yet but if SheilaAnn can grant me an exception from following this recipe exactly, I can post it here too

This is an excellent choice for our first go at this! Straightforward recipe and perfect for the weather. I'll try to participate!

This will be my first homemade pot pie. I’m looking forward to it. I even read the recipe to my wife and she said she’d eat it (a bigger deal than that sounds like).

Holy carp... I was gonna do this, then I saw the ingredient list. Fresh thyme? Ok, I can find some of that, I suppose. Turmeric??? Who has turmeric sitting around? Really? Is this just for color? I'm gonna add some red or purple food coloring to mine instead. I just... can't... follow... a recipe! UGH. This is absolute torture for me, if I have to follow the recipe.

The turmeric is for color, as it does not add distinctive flavor profile. You can substitute dried thyme. I’m not a monster! šŸ‘暟«¶šŸ»

Right now I am on the fence as to cooking this one. Chicken Pot Pie is like foreign territory. If I do, salt and pepper to taste will be Creole seasoning.

Isn't that kind of a point of this? Cook something you haven't done, do it by the book.... see what happens?

acorgihouse you are correct. Get out of your comfort zone, as it were.

I cook things that I have never cooked before all the time and have even been willing to test the results on guests. But, while I have never cooked pot pie before I have never eaten one that I thought much of. I think it may be a little bit like chicken and dumplings. For me it isn’t anything to get excited, but if you grew up eating it with family it is special. Just like my red beans and rice are for me. Twelve servings is over the top for me and my wife. I suppose I could scale it back, because I doubt leftovers freeze well. But, then again being inexperienced I could be wrong. I still may do it. Anyone have ideas for leftover pie crust?

Leftover pie crust? I’ve made little cutouts, baked off and used as ā€œcroutonsā€ on soup. Or I have made a ā€œpoor man’s grissiniā€

It happens everyday! Generally pencil-sized sticks of crisp, dry baked bread that originated in the Italian city of Turin, Piedmont. Learned something new. Tx SA.

So, if going by the book; the book says nothing re preparation of the chicken. So many creative possibilities in acquiring/creating shredded chicken.

Y’all…. Pull some smoked chicken out of the back of your freezer! Or whatever. yakima speaks truth. The recipe just calls for shredded chicken. The rest is on you šŸ™ƒ

And who knew the peas would be such a big deal as opposed to the chicken. 🤣🤣🤣

Seriously, I just thought this was a simple recipe to get us going.

Store bought rotisserie chicken or poached chicken breast are the two most commonly referenced "sources" of the shredded chicken in most recipes. Neither appeal much to me. I like using either smoked or roasted chicken thighs but if you really want to go all out, some confit chicken (or turkey) is killer in a pot pie

I’m really torn about participating in this. 😢 Marie Callender and I have been dating for many years now, never once have I cheated on her! I will admit though, our relationship lately has become kind of stale and boring. I mean, she’s just so darn predictable, same ol, same ol. Thoughts of infidelity have occasionally reared their ugly head, but I’ve always managed to brush them off. Well, after giving this much thought, I think I’ll text her and break it off. Darn you SheilaAnn ! Wish me luck, you know what they sayā€¦ā€ Hell hath no fury like a scorned pot pie.ā€

Those going on about the peas... make the recipe and serve with a side of peas, take your pic and let the peas go swimming in the gravy on the plate afterwards.

Anyway, I'll see what the store has, I might be in for this weekend. I personally would have loved to do smaller single serve pot pies, but the recipe says one big one, so that's what we'll do.

I usually do mine as individuals in ramekins, but in the spirit of the event, I'll do it as one big pie as well. The GF will be snippy about the lack of a bottom crust as well, but I'll blame SheilaAnn for being such a tyrant about following the rules.

Well I'm going to reconsider. After showing Nancy and explaining what this is about, she looked at me and the recipe. Serves 12. She's not a fan of chicken pot pie so will not consume. Question asked, what are the going to do with other 11 servings? deer in the headlight kinda look. I could portion out and freeze. I then have 2 to 3 years worth. I might have store bought 2 times a year. Maybe I'll opt in on the next option.

Most of those recipe servings are wildly exaggerated and don’t serve nearly as many as they claim, unless you’re a rabbit. I feel like they should put a disclaimer in them likeā€¦ā€serves 12, or 4 Pit Members.

Thanks for the opinions. However, as I agree it isn't a single portion, maybe not 12 but more than 1. I'm not going to freeze any so I'll scale to fit my belly. Of course that takes me out of the official Team Cook. But it could be shared in another popular thread.

Chicken plan. Basing it on claycoyote.com blog entry for Marry Me Chicken. Skinless boneless thighs, tagine, prolly use cover for moisture insurance. At rest stage for thighs, shred, then finish with seasoning/sauce, etc. Dough, prolly store bought.
Shredded/dismembered chicken feet would add collagen, but will pass this time.
Will make full recipe. Can pawn leftovers on kids. Unlike every other soul here, I do not freeze leftovers.

The most challenging, for me, will be pics. I don't do it enough to have an engrained procedure. So, in a way, SheilaAnn is doing me a service.

CPP in oven. Did chicken per Marry Me Chicken, courtesy of claycoyote.com. The sauce from that recipe carries over a bit into SheilaAnn's recipe. Crust is Crescent Dough on top.
This will undoubtedly be the best homemade chicken pot pie that I have ever had,
Conversely, also the worst, since I have never had homemade before.

The source of your chicken and how to cook it IS in the editorial she writes about the recipe…

Then throw in the cooked poultry, whether it's chicken or turkey! I like to have a mix of white and dark meat shredded into big chunks.

You can get the meat by using any of the following methods:

              * Boil a whole cut-up fryer for 25-30 minutes. Remove the meat pieces and let them cool until you can handle them, then remove all the meat from the bones with two forks.

              * Have a huge Thanksgiving dinner and wrap up the turkey leftovers.

              * Roast a chicken in the oven and shred the meat.

              * Buy a dang rotisserie chicken at the dang supermarket and call it a day

Add one more: have need to "make space" in garage fridge, take out the "extra" Thanksgiving turkey that never got cooked, thaw it out and roast on a random cold Thursday to smell up the house, and give you plenty of turkey. Put that carcass in the IP and make tons of broth, for the PP and to go back in said freezer. Efficiency in action...

All legit! I’ll be doing a ā€œpoachā€ of sorts to channel my inner Julia Child. She did a lot of poached chicken. I want to smoke it something fierce…. But I’m not lighting up until post fires.
