    Jamón Ibérico de Bellota

    I went to a nice restaurant for dinner tonight (heated outdoor seating). They had jamon iberico de bellota on the menu. The owner happened to come out to take our order and I had to ask him about the iberico ham, after reading all of Henrik ‘s posts about Iberico pork. He was very excited to describe how they purchase only certified jamon iberico de bellota which is purebred iberico hogs that are free range in oak forests, feeding only on acorns. They sell it by the ounce, for $18 per ounce. I couldn’t resist getting two ounces. This ham was fantastic! It was served in super thin slices with lots of fat that just melt in your mouth. This ham was dry cured and aged four years. I’ve never had anything like it, it was fantastic!

    It's as good a ham as you can get. Very popular here in Europe and obviously in Spain. Full of taste, great fat content and, if sliced super thin, can be eaten with almost anything. Great just on its on with Tomatoes and bread

      Yes! It IS that good, isn’t it? All that good fat and flavor, it really is amazing. I’m happy to hear you gave it a try. Wait til you get your hands on some Secreto.

        Nice, I think it be compulsory for one to enjoy anything at that price. I would convince myself I did even if I hadn't.

            Went to a few trade shows in Barcelona. That’s when I first got a taste of Iberico Jamon. Delicious. Visited a city market (Mercado de La Boqueria) where the iberico ham in bone are hanging all over.
            Brought a lot home ;-)

              But, if you get the wrong customs agent on your return, they can pitch your Jamon into their waste bin! There are two FDA certified Spanish producers, Fermin and another I can't remember. Nevertheless, you are still at the mercy of the person with the gun and badge as you re-enter. Definitely less expensive in Spain!

                Dr. Pepper - I *think* you can pick up stuff from them. They no longer have a storefront, but they're downtown-ish IIRC. Tons of really good specialty foods in addition to the meat.

              rickgregory Marx is a great group. Very responsive. I ordered a box of New Zealand lamb rear shanks, and they delivered it to our house in Seattle the next day! I put 4 of the frozen packages (2 shanks each) into the freezer, and used my bone saw on the remaining 12 to cut them for a David Tannis recipe (for Xmas day.) I am looking forward to when they get their cordero lechero back in stock.

                Costco has an entire leg of iberico bellota for 550 online and i've heard some warehouses had it discounted from there(not to be confused with the front shoulder which my local costco has for i think around $200). I ended up buying a leg from a different purveyor and paying extra to have them hand slice and vacuum seal. it came out to around $100 / lb of meat for ~ 8 pounds. Might be worth looking into if you could find a few others to split it as the math is pretty compelling to buy in bulk.
