These are lamb back ribs or "riblets". Rubbed the night before and left uncovered in the fridge. Hung in the PBC for a little over 2 hours. Definite crowd pleaser.
I personally love mutton and goat. My father used to raise goat, now I have to go to the specialty markets to get it. looks awesome. Glad to see you aren't butchering it with lime and mint jelly!
Lamb is by far the favorite meat in our house so we eat it a fair amount. It is readily available here but tends to be on the pricey side. As a side note, no mint jelly has every seen the inside of my kitchen.
