Update on my lamb lollipop dinner tonight.
Evetything came out great! Potatoes were a little over done but I was not in charge of those. Forgot to put foil under the bones so a couple of them burned off during the sear.
Did reverse sear method on the kettle. Cooked to 128 internal temp and pulled. Tender and juicy!

I made this on the KBQ one time. Slow cooked in the cookbox then seared on the open, oak flame. Holy Shniekies was that good.

That lamb looks really good. You really can't beat nice grilled lamb. Potatoes overdone are still great, more of a preference thing. Underdone everyone notices (I always hear about it anyway ).
