Smoked two racks of Denver Ribs(lamb spare ribs) I bought from D'Artagnan Gourmet Meats. Gotta tell you that I love spare ribs in general and I think these were some of the best I've ever had!! American lamb is the best in the world---superior to lamb imported from New Zealand and/or Australia---mild, tender, and sweet. Don't cook past medium rare.
