I'm going to be doing a lamb shoulder this weekend, planning on the Dolly Rub and serving it pulled as sandwiches. I'll let people know how it turned out...I really want this to work, since for some reason I'm just really interested in unusual / out of the ordinary meats to BBQ.

I did my pulled lamb, and I just wasn't a fan.
I've tried lamb a ton of times, a ton of ways, when I go to Texas de Brazil or Fogo de Chao and even last month went to Brasao, tried the lamb at all of them and didn't like it.
Lamb just has a gamey kind of flavor somehow I do. not. like. Maybe it's just 'lamb' flavor. Honestly, I don't finish it when I order it, and I throw it away when I make it. I'll eat the one meal when it's fresh and hot, but I'm never happy with it, and I'm not going to eat the leftovers, and neither does anyone else in my house. So it ends up in the trash.
It's like fish, too - people tell me, "Oh, you've never had MY fish! I always do it like this...." and they proceed to tell me their process, how they clean it, how they soak it, with lamb or deer, it's all about the diet, about the cleaning, about whatever, they say that 'gameyness' isn't ever a problem with THEIRS.
And yet, I've never ever, in all my days, ever found a lamb dish I really liked. I did have lamb chops once at a place, at a really fancy-dancy restaurant and they were pretty decent, but those were like little bitty lollipops, hardly any meat at all, obviously a VERY young and small critter. Just a snack, but they were ok.
Overall....
Lamb, and fish, both - I think I'm just gonna pass from now on. I'm gonna stop trying. I just don't like them. Any of them. No matter how I prepare them or where else I eat them. It's sad, and people are flabbergasted, and like I said, everyone always swears if I ate THEIR version of it, I'd become a convert...
