Enjoyed a lamb leg roast I picked up from Costco. About 5 lbs. I used the Dolly the Lamb recipe on AR, made the chimichurri recipe on AR, and roasted some red bell peppers. Plus fingerling potatoes!
Overall, it tasted great! My wife was floored with how good it was. She really really loved the chimichurri sauce. And she is now sold out and a true believer of AR and their recipes.
My question is, should I have removed the netting around the roast when I seared it? I did, but it sort of fell apart a bit.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

In the past, cooking the same roast rom Costco, I have removed the netting to make the slits in the meat when applying the rub/paste and then I use butcher twine to tighten it back up. Looks like it turned out great.
