    An interesting take on chimichurri

    I have some herbs I need to use up so was looking for some inspiration. Ran across this guy and he has a bunch of really great videos (spent the last hour randomly clicking some).

    Anyway, I think the Pit will appreciate his version, specifically the way he breaks things down and gives the why's.



    I'm going to be using a ton of long leaf basil, probably no parsley because my plant died, and some other things. His breakdown helped me visualize what I plan on doing. Should be posting results by this weekend.

    His kielbasa recipe is great. Lots of good stuff on his channel.

      didn't see that one, gonna take me a few days to dive through his content. His vids are a little long winded but not terrible by any means and I like his format and wide variety of content. Actually, just watched it, I think I have seen that one linked on here before. It looks amazing.

        Nice video. Surprised that he doesn't use a time-saving food processor for finely minced chimichurri. A blender seems like overkill to me.

          He moved to Paris earlier this year, not permanently, just for the experience. He had a vid that explained how he's "travelling light".........could be the blender is part of his compromise.

          Its not the same hand chopping vs food processor....you get much better texture with the hand chop while food pro is more homogenized and it breaks down the soft herbs more

          I prefer hand chopping for these type of sauces

          Pobeque , FWIW I sparingly pulse the herbs for chimichurri in my Breville food processor and the resulting sauce consistency looks pretty much like the one he made--not homogeneous at all. I agree that if you use a heavy hand with the food processor you'll end up with badly bruised and possibly mushy herbs.
