    Never.....and I repeat never, try to spatchcock a heritage turkey. 🤬🤬🤬

    I am now the proud owner of two boneless/skin-on breasts, two leg quarters and two wings.
    Additionally, lots of bones for soup/broth.
    Wings will be frozen for future smoking for NY Day Collard Greens.

    I knew the meat was different, but are the bones that different it would affect spatchcocking?

      OMG! I fancy myself a pretty strong woman, but I could not get through some of the bones. I was able to remove the wishbone (super strong tendons), but when it came to the keel bone, that’s when I gave in. Heritage birds are not the usual broad breasted we are used to. Plus I think they are a bit older. I know it will taste great. I describe it as a " turkier" turkey. Making broth in the pressure cooker now.

      Didn't think about them being older would = stronger bones... I have bone shears I use for spatchocking not sure those woulda made a difference or not? Did you use shears or a knife? I'm sure it will be delicious regardless. Just tell the in-laws that the dissected presentation is the standard for heritage birds

      Tell them in laws the boid got hit by a car and you got a good deal on it.
      During dinner casually mention your cars in the body shop....

    Here it is in the brine. The big lump you see is all keel bone! It was all attached. My arms are sore and I need a G&T!

      Bolt or cable cutters = no problem.

      just be sure to clean well before and after.

        In hindsight.....coulda worked. But, yes, I am a very thorough cleaner especially when it comes to poultry.

        I routinely use my garden shears on regular turkeys anyway. As to that keel bone, my large branch loppers would have done the trick !!!

      Tin sips. more leverage, if it will cut through tin it will cut through fowl bones.

        Someone around here bought a prime rib that came frozen, and I think you could get a good deal on a meat saw!

            I smoked a spatchcocked heritage turkey a few years ago. I had the meat shop do the spatchcocking for me. No way did the keel bone look like that, SheilaAnn . I'd say you did a great save. Enjoy your Thanksgiving G&Ts. You deserve them!

              I have actually seen a big heritage bird done with a Sawzall. Seemed to work great. 🤔

                      Hope your using stainless steel blades, one would think the yellow paint off the Dewalt blades would discolor the meat
