Our grandkids LOVE chicken legs (grandpa and grandma too!) We decided to follow Meathead's advice on "sous-vide-que", and it's been a success!
Costco has a great deal on chicken legs, six packs of six legs for less than $10! We sous vide(d) up a couple of six packs, following the instructions on the sous vide. We love and use our sous vide regularly, but that's a whole other topic.
We placed them in this cool smoking rack (Amazon for eight bucks!) and smoked them on our MAK 2-star general for about an hour and a half. Finally, a quick sear on the Weber Genesis II and turned them over to the grandchildren. I didn't know a 6 year old boy could down four chicken legs so quickly!
The sous vide cooks the chicken perfectly, never dried out and leaves the chicken firm and juicy. The smoking not only added the flavor but helped firm up the skin. The searing provided the great marks and helped provide the crispy, bite through skin! We'll definitely do his again!
