    Life changing chicken

    So I had been looking for a rub to cook some chicken. It had been recommended that I try the Simon & Garfunkel and the Meathead Memphis dust. I decided to so both. Holy s#!t. Both were absolutely frightening. The S&G was a lot more herbal and the MMD brought a sweeter more, (n my opinion) Bbq flavour. Would have no problem cook either again. If I had to choose I would go for the S&G.

    This was also the 1st time that I had dry brined the chicken. I done it for almost 24hrs and what a difference that makes to the juicy and tender chicken witbe the perfect crispy skin.

    I need to take more photographs next time. Especially after the cook.

    Cool. Chicken is always nice, turns out great on the grill . I hardly ever cook chicken indoors anymore.

    Welcome to the Happy Chicken Cookers Club, BBQ with Bry . Meathead's rubs are delicious and allow you to add salt separately so you can get a good dry brine and still be able to pile on the flavor with the rub. It will be great to see more photos next time you do a chicken cook. I bet your family was happy with their Winner Chicken Dinner.

      Haha. Welcome to the club my fellow scotsman! Gone are the days of your mothers oven roasted, dry, hard to chew chicken that actually sucks moisture out of your mouth...ugh, im shaking off bad memories, lol

        I’m gonna buck the trend and say that my mom is a very good cook. But, she like’s smoke roasted chicken better than oven roasted.

          Just yesterday I saw "Official State Fair Cornell Chicken Sauce" bottled in the supermarket. They have a Spiedie sauce, too

        Am I the only one who still LOVES CHICKEN IN THE OVEN?

        Good for you man. Great grilled chicken is pretty stinking .... great! Love that stuff. It’s nice to nail something.

          I keep thinking I am going to try making a roasted chicken using my Lodge dutch oven one of these days, and I would do that in the oven most likely.

          jfmorris if it’s just chicken do it spatchcocked on a rack n sheet pan 350-375 convection. Whole I do a shallow pan so the bottom don’t get soggy and gets some air and color. Dang man.. those things are dern guud!!

        Love me grilled chicken, but convection chicken in the oven is right up there because of the drum-head skin. Especially with Simon & Garfunkel.

          I keep meaning to try S&G but never think of it when I'm going to cook chicken. I do love me some MMD on BBQ chicken, though.

        Simon and Garfunkel rub is amazing. Some of my favorite stuff, it is also great on chops or pork loin. Give that a try too.

          Simon and Garfunkel is the bomb! I use it on veggies a lot, too. Especially asparagus. My Thanksgiving turkey always has Simon and Garfunkel on it.
