    Dry Brining & Simon & Garfunkel?

    Just wondering about Mr. Goldwyn's Smoked and Grilled Turkey Recipe: The Ultimate Turkey Easily Adapted To Cooking Indoors...

    He mentions dry brining, but specifically calls for the "Simon & Garfunkel" dry rub. Do I do both?

    Yes, do both. The Simon and Garfunkel rub has no salt.

                  Definitely do both. S&G has been my go-to poultry seasoning for a half-dozen years (or however long I’ve been using the main site). It’ll be the best bird you’ve ever cooked. Bonus points for spatchcocking!

                    It makes a wonderful combination. Been using same or similar for over 10 years. I also do an upgrade if doing on the smoker and mix S&G with butter the night before let the butter set on the counter over night and then when you pull the bird out of the fridge you put the butter herb mix under the skin and some in the cavity.
