Plan on doing two in the same grill. Will that put off too muck grease on the drip pan in the Traeger and start a fire? Plan on smoking at 300 degrees?

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I *always* smoke multiple turkeys - 2 and sometimes 3. You won't have a fire, just check your grease catch bucket if your Traeger has one, and also maybe you can put some cheap foil pans on top of the heat deflector to catch some of the drippings under each turkey? That way you have less mess running through the grease collection system, and maybe you can leverage the drippings for gravy.
325 to 350 is the best smoking temperature for poultry. Makes the skin crispier versus rubbery, and gets it done faster and juicier.Last edited by jfmorris; November 25, 2019, 11:00 AM.
