A couple of weeks ago I made chicken lollipops on my kettle with the vortex and used Sweet Baby Rays. They were so good we wanted them again, but of course I had to change things up.
First things first, had to relocate this fine specimen off the PBC and into the yard.
I still used Plowboy’s Yardbird rub but this time cooked them on the PBC - full charcoal basket, grate, no rebar, mesquite chunk.
Checked them 45 min later and they were ready for saucin’.
Took them off, removed the foil, dipped each in a ramekin of Blues Hog Original, and returned them to the grate.
~10 minutes later the sauce was set. Took them off and chowed down.
These were better, mostly due to the sauce which set better and had a much better flavor to us. The family is LOVING these!
