Is using a cookie sheet or aluminum foil similar to indirect heating? Or is the cookie sheet bottom too hot? I'd like to use the whole grill area.

IF I remember correctly aluminum transfers heat really well. I would try putting water in it. But that may not work well for a long cook as a cookie sheet probably will not hold enough water and would need to be refilled often.
