Before and after pics of my maiden voyage using the Vortex to make chicken wings on my Weber Kettle with the Weber 8835 grate. I kept all vents open. Threw in a chunk of Pecan into the Vortex. Rubbed the wings with Spicy Caballero seasonings El Borikua rub. Cooked for 1 hour. Skins were crispy, wings were delicious! I won't be doing wings any other way.

Yes! That is the cover of a Gentle Giant album. Love those guys and I think I resemble the picture in a sort of way. For the wings, I did like 3/4 chimney of coals and then filled up the extra space in the vortex with more coals. Kept the top on the grill and after an hour, those wings were crispy! I think I will try breading them up next time to see how they would come out...

Unbelievable ! I have the album in my vinyl collection and I bet I have not viewed the album cover artwork in over 30 years . . . .but I remember that face. I can't remember what I went to the grocery store to get but I remember something that obscure. No wonder I frustrate my wife. Also, let's face it Gentle Giant is not Led Zeppelin so not many would know this. Small darn world, eh?

Here is a breading recipe for wings from
David Parrish After brining, add:
2 Tbsp All Purpose Flour
2 Tbsp Baking Powder
1 Tbsp Salt
to a large (gallon-sized) Ziplock bag. Mix to combine, then add the chicken wings and toss thoroughly to coat the wings well in the dredge. Shake off any excess flour mixture.
Excellent! Only way I cook wings now!
