    turkey pastrami at home?

    I had a really good turkey pastrami sandwich yesterday. It never occurred to me before, but is turkey pastrami something I can make at home?

    Here's a recipe that uses Sous Vide:


    But has enough that you could modify the AR pastrami process without sous vide to work.

    Absolutely you can. I have done so numerous time. I use boneless, skinless turkey breasts and then cure them for about 2-3 days before desalinating, coating with a pastrami rub and then smoking to 155-160 degrees. You could also finish in a low oven if you don't want smoke flavor.

    I have also tried via sous vide and did not like the results as much as the ones I smoked or finished in a low oven.

      I've done meatheads beef pastrami several times, we like it. I'll try this way also.

      I have made goose pastrami. It was delicious! I bet duck would be good as well.
