I usually marinate wings in Italian dressing for an hour or so, then grill them, and flash fry in corn oil before tossing in store bought wing sauce. Does anyone have a better recipe for cooking the wings and a homemade wing sauce??

This wing sauce is sufficiently popular that when I say I'm thinking of trying something different, a bunch of whining ensues. Quantities are approximate, also not critical (I just eyeball it). I mostly make 18-24 wings at a time, cooked either on the grill or under the broiler. Then the sauce. Combine all this is a sauce pan, throw in the wings, and reduce over high heat. Keep the wings moving, and stop when the sauce thicken up to your liking, and they are well-coated.
1/2 cup Franks Hot Sauce
1/2 stick of butter
2-3 Tbsp brown sugar
2-3 Tbsp salad-grade Balsamic (I mostly use Kirkland)
3-4 Tbsp hotter hot sauce (e.g. Tabasco, Sriracha), to taste
My secret ingredient is Shark Sriracha for the hotter hot sauce. Not so common in these parts. I get mine from https://importfood.com . A site worth knowing about for anyone who likes to cook.

I like to hit the wings with Hardcore Carnivore Red, no sauce. I do them on the indirect side of the grill at 325 for 25-30 minutes, take them off and crank the fire, then crisp them for a minute or two on each side.
