    temp. difference from book to website?

    Big Bob Gibsons chicken in bama white sauce on page 301 in MeatHeads book call for different temps then the recipe on this site. ex. book says smoke at 225 website says 325, book also has different meat temps than website....

    Roll with either but I prefer 350 minimum for chicken. The 225 probably includes a reverse sear.

      Yep, Meathead on occasion recommends 225 for chicken recipes to get more smoke into it, but then a sear/crisping with high heat at the end. Personally I find searing chicken to be a pain and I don't care for the char on the skin, so I too stick with a higher heat cook.

        I watched a thing on Big Bob's pits and I think they run in the 300-350 range.
