I think the original recipe had us putting orange peel/onion/bay leaves inside the bird cavity. Am I remembering a change of opinion on that? I can't seem to locate it. Thanks
He changed it. I saw him mention that to someone on the main website. Forget the exact reason why. I will forward this to him. I know with a spatchcocked bird....aromatics? We don't need no stinkin' aromatics!
I came to the conclusion that they were not very effective in adding flavor and they were blocking airflow/heat/smoke. I think it is better to salt and add rub to the cavity for flavor
