Will sugars burn in Meathead Memphis Dust?

I'd like to use Meatheads Memphis Dust on a whole smoked chicken this weekend. Will the sugars burn if I cook at 350 degrees? Using my 14.5 WSM for the cook.

350F is the point where sugars start to burn. I often will recommend to folks when using a sugary rub at higher cooking temps, like with chicken for instance, that they cook from 325-340. You can hit 350 without instant burn, but you just really need to watch things.

I've often wondered about that since the surface of meat is NOT getting to 350 degrees cooking indirectly, especially on a short chicken cook.

This is one of the reasons I love to use the S&G rub for hot and fast chicken. It does contain sugar, but not nearly as much as MD.

Same, I love herb chicken too and it makes hotter & faster easier.

I use MMD on chicken all the time. Never had an issue with it burning. It's great on chicken!

I'm a sucker for that BBQ flavor so I'll do the S&G rub another time. This time around it's paprika and sugar baby!
