When I owned a gas grill here is what I did with pretty good results. I preheated the grill to 550. I pounded the breast flat, spray with oil on each side and seasoned both sides. I placed the breast on the grill smooth side down and close the lead for 2 minutes. After 2 minutes I rotated the breast 90 degrees closing the lid again. Then I turned them over and repeated process. I didn't own a digital thermometer then, so using one may shorten the cook time to reach 165. I hope this works for you.
Thanks everyone for your input and techniques. I went next door to the greek restaurant, and picked up 3lbs of their greek mediteranean chicken. Yes, I know, I cheated but is the best and it retains water. I also bought a set of Grill Grates.
