I actually took a few pictures last night of the jerk chicken quarters I made. One action shot and one finished shot. I crammed quite a few quarters on the Kettle, otherwise they would have been a bit more consistent in color. Still phenomenal though! I made it mostly per recipe except I used chicken quarters, not a whole chicken, and I used Serrano peppers. I can't find Scotch Bonnets around here and I think they'd be too hot for my wife. Serranos still give off plenty of heat, aren't so hot that they mask the wonderful herbs and spices, and are more flavorful than Jalapeños. I use Meathead's grilling technique for grilling them.
I've tended to have better flavor when I've used lump (Fogo in my case) but I'm not entirely sure that the charcoal was the main culprit the time I used briqs with this recipe. This is one of my favorite chicken recipes!
