I have an event where I need to transport smoked chicken breasts about an hour and keep them for about an hour there. (About 2 hours total). Do you think if I smoked the breasts, wrapped them in foil and blankets/towels and put them in an insulated bag or cooler they would hold for long enough? Also, would you pull the chicken before wrapping or right before serving?
You should be fine wrapping in foil then insulate in a cooler with towels. I have done this with whole chickens and been fine for two to three hours. Your second question confuses me.
If you mean "pulled" as in shredded it might be better to use boneless skinless thighs. Breast is pretty lean to pull. If it has to be breast for company's sake or dietary reasons I would still cook breast to correct internal temp and use the knife to get to the desired physical outcome. In either case I'd wait to pull.
