            Those are beautiful! Do you ever wrap your birds? When I do beer can chicken I’ll wrap them in foil at the end of the cook and let them slowly come down in temp in the oven. It’s amazing how long they’ll stay hot in there. I believe it improves both the texture and flavor. I’ve never been able to get truly crispy skin on these so it doesn’t bother me that wrapping makes the skin get soft. It’s just a thought. I’ve never ask if others do this or not, that I remember.

              I've wrapped Thighs when they're about done and left them to finish. The skin isn't crispy but the fat renders nicely and meat is great IMO.
